Ingredients

  • 4 cod fillets about 4 oz each
  • 1/2 cup breadcrumbs preferably panko for extra crunch
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh dill chopped (optional)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Lemon wedges for serving optional

Instructions

  • Preheat the Oven
  • Preheat your oven to 400°F (200°C) and lightly grease a baking sheet or baking dish with a little olive oil or non-stick spray.
  • Prepare the Herb Crust
  • In a small mixing bowl, combine the breadcrumbs, Parmesan cheese, fresh parsley, thyme, and dill (if using). Add a pinch of salt and pepper, then stir in the olive oil and lemon juice. Mix well until the breadcrumb mixture is coated in the oil and juice and the herbs are evenly distributed.
  • Prepare the Cod Fillets
  • Season the cod fillets with salt and pepper on both sides. Place the fillets on the prepared baking sheet or baking dish, making sure they are spaced out evenly.
  • Apply the Herb Crust
  • Spoon the breadcrumb mixture generously over the top of each cod fillet, pressing it down slightly so it adheres to the fish.
  • Bake the Cod
  • Place the baking sheet in the preheated oven and bake the cod for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork. The herb crust should be golden brown and crisp.
  • Serve
  • Once the cod is baked, remove it from the oven and serve immediately with lemon wedges on the side for a fresh burst of flavor. Pair the dish with roasted vegetables or a light salad for a well-rounded meal.
