Preheat the Oven:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
Prepare the Sweet Potatoes:
Wash and peel the sweet potatoes (optional). Cut them into wedges, about 1/2 inch thick.
Season the Wedges:
Place the sweet potato wedges in a large mixing bowl. Add olive oil, garlic powder, paprika, cinnamon (if using), salt, and pepper. Toss until all the wedges are evenly coated.
Arrange on Baking Sheet:
Spread the wedges out in a single layer on the prepared baking sheet. Make sure they aren’t overcrowded to ensure even baking.
Bake the Wedges:
Bake for 20 minutes, then flip the wedges to ensure even browning. Continue baking for another 15-20 minutes, or until the edges are crispy and the centers are tender.
Serve Hot:
Remove from the oven and let the wedges cool slightly before serving. Garnish with fresh thyme or rosemary, if desired.
