Ingredients

  • 2 ribeye steaks or your preferred cut
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper optional for extra heat
  • Salt and black pepper to taste
  • 2 tablespoons unsalted butter
  • 2 garlic cloves smashed
  • Fresh thyme or rosemary sprigs optional for basting

Instructions

  • Prepare the Steaks
  • Pat the steaks dry with paper towels and bring them to room temperature for about 30 minutes. This ensures even cooking.
  • Season the Steaks
  • In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Rub the steaks with olive oil, then coat them generously with the seasoning mix, pressing it into the meat for a flavorful crust.
  • Heat the Skillet
  • Heat a cast iron skillet over high heat until smoking hot. Add a tablespoon of olive oil to coat the pan evenly.
  • Sear the Steaks
