Prepare the Baking Sheet:
Line a baking sheet with parchment paper.
Mix the Yogurt Base:
In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Mix well until smooth and well combined.
Spread the Yogurt:
Pour the yogurt mixture onto the prepared baking sheet and spread it evenly with a spatula to a thickness of about 1/4 inch.
Add the Toppings:
Scatter the pitted and halved cherries over the yogurt.
If using, sprinkle the chopped nuts and dark chocolate chips or shavings on top.
Freeze:
Place the baking sheet in the freezer and freeze for at least 2-3 hours or until the yogurt is fully set and firm.
Break into Pieces:
Once fully frozen, remove the baking sheet from the freezer. Break the yogurt bark into pieces of your desired size.
Store:
Store the frozen yogurt bark in an airtight container in the freezer until ready to serve.
