Ingredients

  • 2 boneless skinless chicken breasts, cut into 1-inch cubes
  • 1 fresh pineapple peeled, cored, and cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces (optional)
  • 1 red onion cut into 1-inch pieces (optional)
  • For the Marinade:
  • 1/4 cup soy sauce
  • 1/4 cup pineapple juice from the fresh pineapple or canned
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper

Instructions

  • Prepare the Marinade:
  • In a mixing bowl, whisk together the soy sauce, pineapple juice, honey, olive oil, minced garlic, grated ginger, and black pepper.
  • Marinate the Chicken:
  • Add the chicken cubes to the marinade, tossing to coat evenly.
  • Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  • Assemble the Skewers:
  • Thread the marinated chicken, pineapple chunks, red bell pepper pieces, and red onion pieces onto the skewers, alternating between the ingredients for a colorful presentation.
  • Preheat the Grill:
  • Preheat your grill or grill pan to medium-high heat.
  • Grill the Skewers:
  • Place the skewers on the preheated grill.
