Equipment

  • Baking sheet
  • Large skillet
  • Shallow bowls for breading
  • Measuring cups and spoons
  • Spatula
  • Oven-safe skillet or baking dish

Ingredients

  • For the Chicken:
  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably Italian-seasoned
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup olive oil for frying
  • For the Sauce and Topping:
  • 2 cups marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves chopped (for garnish)

Instructions

  • Prepare the Chicken:
  • Preheat your oven to 375°F (190°C).
  • Pound the chicken breasts to an even thickness using a meat mallet or rolling pin.
  • Season the chicken breasts with salt and pepper on both sides.
  • Bread the Chicken:
  • Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan, garlic powder, and onion powder.
  • Dredge each chicken breast in flour, shaking off any excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing lightly to adhere.
  • Fry the Chicken:
  • In a large skillet, heat olive oil over medium-high heat.
  • Fry the breaded chicken breasts until golden brown and crispy, about 3-4 minutes per side. Work in batches if necessary to avoid overcrowding the skillet.
  • Transfer the fried chicken to a baking sheet lined with paper towels to drain excess oil.
  • Assemble and Bake:
  • Spread a thin layer of marinara sauce on the bottom of an oven-safe skillet or baking dish.
  • Place the fried chicken breasts on top of the sauce.
  • Spoon additional marinara sauce over each chicken breast, then sprinkle with shredded mozzarella and grated Parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.
  • Serve:
  • Garnish with fresh basil leaves before serving.
  • Serve the Chicken Parmesan hot, alongside pasta, a fresh salad, or garlic bread.
