Make the Au Jus:
In a medium saucepan, combine the beef broth, Worcestershire sauce, soy sauce, garlic powder, onion powder, and thyme.
Bring the mixture to a simmer over medium heat and cook for 5-7 minutes to meld the flavors.
Season with salt and pepper to taste. Keep warm.
Prepare the Sandwiches:
Preheat a skillet over medium heat and lightly butter the cut sides of the rolls. Toast them in the skillet until golden and crispy.
Layer the roast beef onto the bottom halves of the toasted rolls.
Melt the Cheese (Optional):
Place 2 slices of cheese on top of the beef in each sandwich.
Place the sandwiches open-faced on a baking sheet and broil in the oven for 1-2 minutes, until the cheese is melted.
Assemble the Sandwiches:
Close the sandwiches with the top halves of the rolls.
Serve immediately with small bowls of warm au jus on the side for dipping.
