Prepare the Chicken Marinade:

Rub this mixture evenly over the chicken breasts. Cover and let marinate in the fridge for at least 30 minutes or up to 4 hours.

In a mixing bowl, combine diced pineapple, red bell pepper, red onion, jalapeño (if using), and cilantro.
