Ingredients

  • For the Beef:
  • 3 lbs beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion sliced
  • 4 garlic cloves minced
  • 1 cup beef broth
  • 1/2 cup barbecue sauce
  • 1/4 cup Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the Sandwich:
  • 6 sandwich rolls or hoagie buns
  • Butter for toasting optional
  • Provolone or Swiss cheese optional
  • Pickles or coleslaw for serving optional

Instructions

  • Prepare the Beef:
  • Pat the chuck roast dry and season with salt and pepper on all sides. Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned.
  • Cook the Beef:
  • Place the seared roast in a slow cooker or Dutch oven. Add the sliced onions, garlic, beef broth, barbecue sauce, Worcestershire sauce, apple cider vinegar, brown sugar, smoked paprika, and thyme. Cover and cook on low for 8 hours or until the beef is fork-tender.
  • Shred the Beef:
  • Remove the beef from the cooker and shred it using two forks. Return the shredded beef to the sauce, stirring to combine.
  • Toast the Rolls:
  • Optional: Butter the inside of the sandwich rolls and toast them in a skillet until golden.
  • Assemble the Sandwiches:
