Equipment

  • Large mixing bowl
  • Knife
  • Cutting board
  • Measuring cups and spoons
  • Skillet
  • Toothpicks or kitchen twine
  • Baking dish
  • Aluminum foil

Ingredients

  • For the Stuffed Chicken:
  • 4 boneless skinless chicken breasts
  • 1 cup broccoli florets finely chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley chopped (optional)

Instructions

  • For the Stuffed Chicken:
  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Prepare the Filling: In a large mixing bowl, combine the finely chopped broccoli florets, shredded mozzarella cheese, grated Parmesan cheese, minced garlic, dried thyme, dried oregano, salt, and pepper. Mix well to combine.
  • Prepare the Chicken: Using a sharp knife, carefully cut a pocket into the side of each chicken breast, making sure not to cut all the way through. Season the chicken breasts with salt and pepper.
  • Stuff the Chicken: Fill each chicken breast pocket with the broccoli and cheese mixture, pressing it in gently. Secure the opening with toothpicks or kitchen twine to keep the filling inside during cooking.
  • Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 3-4 minutes on each side, until golden brown.
  • Bake the Chicken: Transfer the seared chicken breasts to a baking dish. Cover with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Serve: Remove the toothpicks or twine before serving. Garnish with chopped fresh parsley, if desired. Serve immediately and enjoy your delicious Cheesy Broccoli Stuffed Chicken.
