Step 1: Marinate the Chicken
In a mixing bowl, combine the chicken breast pieces with 1 tablespoon of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for at least 15 minutes.
Step 2: Prepare the Sauce
In a separate bowl, whisk together the soy sauce, chicken broth, oyster sauce, honey or brown sugar, and cornstarch. Add the water and mix until smooth. Set aside.
Step 3: Cook the Chicken
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the marinated chicken pieces and cook until they are browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
Step 4: Stir-Fry the Vegetables
In the same skillet, add a little more oil if needed. Add the minced garlic and grated ginger, and sauté for about 1 minute until fragrant.
Add the broccoli florets (and any additional vegetables like bell pepper and carrot) to the skillet. Stir-fry for 3-5 minutes until the vegetables are tender but still crisp.
Step 5: Combine and Cook
Return the cooked chicken to the skillet with the vegetables.
Pour the prepared sauce over the chicken and vegetables, stirring well to coat everything evenly.
Cook for another 2-3 minutes until the sauce thickens and everything is heated through.
Step 6: Serve and Store
Divide the stir-fry into meal prep containers.
Let the stir-fry cool before sealing the containers. Store in the refrigerator for up to 4 days.
