Ingredients

  • For the Rice Pudding:
  • 1/2 cup uncooked white rice short or medium grain
  • 2 cups whole milk plus 1/2 cup for later
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Cinnamon Sugar Topping:
  • 2 tablespoons unsalted butter melted
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon ground cinnamon

Instructions

  • Cook the Rice: In a medium saucepan, combine the rice, 2 cups of milk, heavy cream, granulated sugar, and a pinch of salt. Cook over medium heat, stirring occasionally, until the mixture comes to a simmer. Reduce heat to low and cover.
  • Simmer the Pudding: Cook the rice pudding for 25-30 minutes, stirring occasionally to prevent sticking, until the rice is tender and the mixture has thickened.
  • Finish the Pudding: Stir in the vanilla extract and the remaining 1/2 cup of milk. Cook for another 2-3 minutes to combine. Remove from heat.
  • Prepare the Cinnamon Sugar Topping: In a small bowl, mix melted butter, granulated sugar, and cinnamon until well combined.
  • Serve the Rice Pudding: Spoon the warm rice pudding into bowls and drizzle the cinnamon sugar mixture over the top. Serve immediately for a warm treat or chill in the fridge for 1-2 hours if you prefer it cold.
