For the Sloppy Joe Filling:
Cook the Beef: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
Add Onion and Garlic: Add the finely chopped red onion to the skillet and cook until softened, about 3-4 minutes.
Make the Sauce: Stir in the ketchup, tomato paste, Worcestershire sauce, brown sugar, mustard, and beef broth. Mix well to combine. Bring the mixture to a simmer and cook, stirring occasionally, until the sauce has thickened, about 10-15 minutes. Season with salt and pepper to taste.
For the Sautéed Red Onion:
Sauté the Onion: In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the thinly sliced red onion and cook, stirring occasionally, until the onion is soft and caramelized, about 10-15 minutes. If desired, add 1 teaspoon of balsamic vinegar during the last few minutes of cooking for added sweetness and depth of flavor. Season with salt and pepper to taste.
For Assembly:
Toast the Buns (Optional): If you prefer toasted buns, preheat your oven to 350°F (175°C). Spread a little butter on the cut sides of the buns and place them on a baking sheet, cut side up. Toast in the oven for 5-7 minutes, or until golden brown.
Assemble the Sandwiches: Place the bottom halves of the toasted buns on serving plates. Spoon a generous amount of the Sloppy Joe filling onto each bun. Top with sautéed red onions and place the top halves of the buns on top.
