Ingredients

  • 1 cup mashed sweet potatoes about 1 medium sweet potato
  • 1 cup vanilla protein powder
  • 1/2 cup rolled oats
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with muffin liners or spray with non-stick spray.
  • Prepare Sweet Potatoes: If you haven't already, cook and mash the sweet potatoes until smooth. Allow them to cool slightly.
  • Mix Dry Ingredients: In a large mixing bowl, combine the vanilla protein powder, rolled oats, baking powder, cinnamon, and salt. Whisk until well mixed.
  • Combine Wet Ingredients: In a separate bowl, whisk together the mashed sweet potatoes, Greek yogurt, honey or maple syrup, eggs, and vanilla extract until smooth.
  • Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; it’s okay if the batter is slightly lumpy.
