Equipment

  • Large pot (for pasta)

Ingredients

  • 8 oz pasta spaghetti, fettuccine, or penne work best
  • 1 tablespoon olive oil
  • 1 small onion thinly sliced
  • 1 red bell pepper julienned
  • 1 yellow bell pepper julienned
  • 1 zucchini thinly sliced
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1/4 cup vegetable broth or chicken broth
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh basil or parsley chopped (for garnish)
  • Grated Parmesan cheese optional

Instructions

  • Cook the Pasta:
  • Bring a large pot of salted water to a boil and cook the pasta according to the package directions, until al dente. Drain the pasta and set aside.
  • Sauté the Vegetables:
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced onion and bell peppers. Cook for 3-4 minutes, or until the vegetables are slightly tender.
  • Add the zucchini and garlic and cook for another 2 minutes, until fragrant. Then, add the halved cherry tomatoes and cook for an additional 2 minutes until they soften.
  • Prepare the Sauce:
  • Pour in the vegetable or chicken broth and stir in the lemon juice. Let the mixture simmer for 1-2 minutes to combine the flavors. Season with salt and pepper to taste.
  • Combine the Pasta and Veggies:
  • Add the cooked pasta to the skillet with the vegetables and toss everything together, making sure the pasta is well coated with the sauce.
  • Serve:
  • Plate the pasta and garnish with fresh basil or parsley. Top with grated Parmesan cheese if desired.
