Easy and Fast Pasta Primavera

The dish is loaded with fresh veggies, which you can easily customize, and tossed with your favorite pasta for a quick and colorful meal.
- 8 oz pasta spaghetti, fettuccine, or penne work best
- 1 tablespoon olive oil
- 1 small onion thinly sliced
- 1 red bell pepper julienned
- 1 yellow bell pepper julienned
- 1 zucchini thinly sliced
- 1 cup cherry tomatoes halved
- 2 cloves garlic minced
- 1/4 cup vegetable broth or chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh basil or parsley chopped (for garnish)
- Grated Parmesan cheese optional
Cook the Pasta:
Bring a large pot of salted water to a boil and cook the pasta according to the package directions, until al dente. Drain the pasta and set aside.
Sauté the Vegetables:
While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add the sliced onion and bell peppers. Cook for 3-4 minutes, or until the vegetables are slightly tender.

Combine the Pasta and Veggies:
Add the cooked pasta to the skillet with the vegetables and toss everything together, making sure the pasta is well coated with the sauce.
Serve:
Plate the pasta and garnish with fresh basil or parsley. Top with grated Parmesan cheese if desired.
