Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
Prepare the Cauliflower
Cut the cauliflower into small florets, making sure they are roughly the same size so they cook evenly. Pat the florets dry with a paper towel to remove any excess moisture.
Make the Breading
In a shallow bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, oregano, salt, and pepper. Stir until well combined.
Coat the Cauliflower
Dip each cauliflower floret into the beaten eggs, making sure it’s fully coated. Then, roll the floret in the breadcrumb mixture, pressing gently to coat it evenly. Place the coated cauliflower florets on the prepared baking sheet.
Bake the Cauliflower Bites
Drizzle the coated cauliflower with olive oil (optional for extra crispiness) and bake in the preheated oven for 20-25 minutes, flipping the cauliflower halfway through, until golden and crispy on the outside.
Serve and Enjoy
Once the cauliflower bites are done, remove them from the oven and let them cool for a few minutes. Serve warm with your favorite dipping sauce, such as marinara, ranch, or a garlic dip.
