Ingredients

  • 2 tablespoons olive oil
  • 1 lb chicken breast or thighs diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 medium potatoes peeled and diced
  • 2 carrots peeled and sliced
  • 2 celery stalks chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • 1 tablespoon fresh parsley optional, for garnish

Instructions

  • Sauté the Chicken:
  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the pot and set it aside.
  • Cook the Vegetables:
  • In the same pot, add the diced onion, carrots, and celery. Sauté for 4-5 minutes until the vegetables begin to soften. Add the minced garlic and cook for another 1-2 minutes.
  • Add the Potatoes and Broth:
  • Add the diced potatoes, chicken broth, dried thyme, and rosemary to the pot. Stir to combine, and bring the mixture to a boil. Once it’s boiling, reduce the heat to a simmer and cook for 10-15 minutes, or until the potatoes are tender.
  • Make it Creamy:
  • Stir in the heavy cream and return the cooked chicken to the pot. Simmer for another 5 minutes, allowing the stew to thicken and the flavors to meld.
  • Season and Serve:
  • Season with salt and pepper to taste. Garnish with freshly chopped parsley, if desired. Serve hot with crusty bread or crackers.
