Easy Creamy Sausage and Kale Soup Recipe

- 1 lb Italian sausage mild or spicy, as preferred
- 1 tablespoon olive oil if needed
- 1 medium onion diced
- 3 cloves garlic minced
- 4 cups chicken broth
- 2 cups water
- 3 medium potatoes diced (optional, for added heartiness)
- 1 cup heavy cream
- 4 cups kale stems removed, roughly chopped
- 1/2 teaspoon red pepper flakes optional, for heat
- Salt and pepper to taste
- Freshly grated Parmesan cheese for garnish optional
Cook the Sausage
Heat a large pot or Dutch oven over medium heat. Add the sausage and cook until browned and cooked through, breaking it into smaller pieces with a wooden spoon. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot. If there's not enough fat, add 1 tablespoon of olive oil.
Sauté the Aromatics
