Ingredients

  • 1 lb Italian sausage mild or spicy, as preferred
  • 1 tablespoon olive oil if needed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups water
  • 3 medium potatoes diced (optional, for added heartiness)
  • 1 cup heavy cream
  • 4 cups kale stems removed, roughly chopped
  • 1/2 teaspoon red pepper flakes optional, for heat
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish optional

Instructions

  • Cook the Sausage
  • Heat a large pot or Dutch oven over medium heat. Add the sausage and cook until browned and cooked through, breaking it into smaller pieces with a wooden spoon. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot. If there's not enough fat, add 1 tablespoon of olive oil.
  • Sauté the Aromatics
  • Add the diced onion to the pot and sauté for 3-4 minutes, or until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Add Broth and Potatoes
  • Pour in the chicken broth and water. If using potatoes, add them now. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for about 10-12 minutes, or until the potatoes are tender.
  • Add Kale and Sausage
  • Stir the chopped kale into the pot and let it cook for 2-3 minutes, or until slightly wilted. Return the cooked sausage to the pot and stir to combine.
  • Make It Creamy
  • Lower the heat and slowly stir in the heavy cream. Let the soup simmer for 5 minutes to allow the flavors to meld. Season with red pepper flakes (if using), salt, and pepper to taste.
  • Serve
  • Ladle the soup into bowls and garnish with freshly grated Parmesan cheese, if desired. Serve hot with crusty bread for dipping.
