Easy Strawberry Cheesecake

Strawberry cheesecake is a classic dessert loved by many, and adding fresh strawberries inside takes it to the next level. This recipe is perfect for those who love the combination of creamy cheesecake and the sweet, tangy flavor of strawberries. Ingredients

  • For the crust:
  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter melted
  • For the filling:
  • 3 8-ounce packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries hulled and halved
  • For the topping:
  • 1 cup fresh strawberries hulled and sliced
  • 2 tablespoons strawberry jam warmed

Instructions

  • Step 1: Prepare the Crust
  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated with butter.
  • Press the mixture into the bottom of a 9-inch springform pan, making sure it’s evenly distributed and compacted. Bake the crust for 10 minutes, then remove from the oven and let it cool while you prepare the filling.
  • Step 2: Prepare the Filling
  • In a large mixing bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer.
  • Add the granulated sugar and vanilla extract, and continue to beat until well combined.
  • Add the eggs, one at a time, beating well after each addition.
  • Mix in the sour cream until the filling is smooth and creamy.
  • Step 3: Assemble the Cheesecake
  • Pour half of the cheesecake filling over the cooled crust and spread it evenly.
  • Arrange the halved strawberries on top of the filling.
  • Pour the remaining cheesecake filling over the strawberries, spreading it evenly to cover the strawberries completely.
  • Step 4: Bake the Cheesecake
  • Bake the cheesecake in the preheated oven for 55-60 minutes, or until the center is set and the top is slightly golden.
  • Turn off the oven and leave the cheesecake inside with the door slightly open for about an hour to cool gradually.
  • Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours, or overnight, to set.
  • Step 5: Add the Topping
  • Before serving, arrange the sliced strawberries on top of the cheesecake.
