Large pot for boiling cauliflower
Knife and cutting board
Mixing bowl
Potato masher or hand mixer
Skillet for cooking bacon
Spoon for mixing
- 1 large head of cauliflower or 2 bags of pre-cut cauliflower florets
- 4 oz cream cheese softened
- ¼ cup unsalted butter
- ½ cup shredded cheddar cheese plus extra for topping
- 4 slices cooked bacon crumbled
- 2-3 tablespoons milk optional, for creaminess
- 2 green onions sliced (for topping)
- Salt and pepper to taste
Prepare the Cauliflower:
Cut the cauliflower into florets if using a whole head.
Bring a large pot of water to a boil. Add the cauliflower and cook for 8-10 minutes, or until the florets are tender and easily pierced with a fork.
Mash the Cauliflower:
Drain the cauliflower and transfer it to a large mixing bowl.
Using a potato masher or hand mixer, mash the cauliflower until it reaches a smooth and creamy consistency. You can add milk for a creamier texture if desired.
Add the Creaminess:
Stir in the softened cream cheese and butter until fully melted and combined, making the mash rich and velvety.
Add Cheese and Bacon:
Mix in the shredded cheddar cheese until melted and incorporated into the mash.
Stir in the crumbled bacon, saving a small amount for topping.
Season and Serve:
Season the cauliflower mash with salt and pepper to taste.
Transfer the mash to a serving dish and top with extra shredded cheddar cheese, crumbled bacon, and sliced green onions.
