Prepare the Dough:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl, cream together the softened butter and sugar until light and fluffy (about 2–3 minutes).
Beat in the eggs one at a time, followed by the lemon zest and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Shape and Bake:
Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet about 2 inches apart.
Flatten each ball slightly with your fingers or the back of a spoon.
Bake for 10–12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Make the Lemon Glaze:
In a small bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth.
Glaze the Cookies:
Once the cookies are completely cool, drizzle or spread the lemon glaze over the tops.
Let the glaze set for about 20–30 minutes before serving.
