Ingredients

  • Cookies:
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Lemon Glaze:
  • 1 1/2 cups powdered sugar
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions

  • Prepare the Dough:
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, cream together the softened butter and sugar until light and fluffy (about 2–3 minutes).
  • Beat in the eggs one at a time, followed by the lemon zest and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Shape and Bake:
  • Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet about 2 inches apart.
  • Flatten each ball slightly with your fingers or the back of a spoon.
  • Bake for 10–12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  • Make the Lemon Glaze:
  • In a small bowl, whisk together the powdered sugar, fresh lemon juice, and lemon zest until smooth.
  • Glaze the Cookies:
  • Once the cookies are completely cool, drizzle or spread the lemon glaze over the tops.
  • Let the glaze set for about 20–30 minutes before serving.
