Ingredients

  • 3 cups fresh raspberries or frozen raspberries
  • 1/2 cup lime juice freshly squeezed
  • 1/2 cup water
  • 1/4 to 1/3 cup honey or sweetener of choice adjust to taste
  • Zest of 1 lime optional, for added flavor

Instructions

  • Prepare the Raspberries:
  • If using fresh raspberries, rinse them thoroughly. If using frozen raspberries, let them thaw slightly for easier blending.
  • Blend the Ingredients:
  • In a blender or food processor, combine the raspberries, lime juice, water, honey (or sweetener of choice), and lime zest (if using). Blend until smooth. Taste the mixture and adjust the sweetness if needed by adding more honey or sweetener.
  • Freeze the Mixture:
  • Pour the blended mixture into a freezer-safe dish or container. Spread it out evenly, cover with a lid or plastic wrap, and place it in the freezer for 3–4 hours, or until firm.
  • Scrape and Serve:
  • Once the sorbet has frozen, remove it from the freezer. Let it sit at room temperature for 5 minutes to soften slightly. Then, use a fork to scrape the sorbet, creating a fluffy, snow-like texture. Spoon the sorbet into bowls or glasses, and serve immediately.
