Toffee Almond Cookies
Toffee almond cookies are a delightful combination of rich buttery flavors, nutty crunch, and chewy sweetness. These cookies are loaded with chunks of toffee bits and sliced almonds, making them a perfect treat for any occasion. They’re simple to make, irresistibly delicious, and great for sharing.
- Cookies:
- 1 cup unsalted butter softened
- 1 cup brown sugar packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup toffee bits
- 1 cup sliced almonds
Prepare the Dough:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, followed by the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the toffee bits and sliced almonds until evenly distributed.
Shape and Bake:
Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet about 2 inches apart.
Bake for 10–12 minutes, or until the edges are golden brown but the centers are still soft.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
