Ingredients

  • Cookies:
  • 1 cup unsalted butter softened
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits
  • 1 cup sliced almonds

Instructions

  • Prepare the Dough:
  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla extract.
  • In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the toffee bits and sliced almonds until evenly distributed.
  • Shape and Bake:
  • Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet about 2 inches apart.
  • Bake for 10–12 minutes, or until the edges are golden brown but the centers are still soft.
  • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
